Chicken Malai Boti, also known as Chicken Malai Tikka, traces its origins back to the Mughal court in Delhi, where Central Asian and Persian food traditions mingled with those of India to produce what is known as Mughlai cuisine. This elegant kebab gets its name, signature succulent, and the luxurious texture from a generous dose of cream (or “malai” in Hindi and Urdu) in the marinade, which also includes crushed almonds, cashews, cilantro stalks, black pepper, and ginger. The abundant use of cream and nuts in this dish is typical of Mughlai cuisine.
